Deliscous and Healthy Grains from the Past, Einkorn
Written by Branden Wehmeier 2/29/2016
I was lucky to recently enjoy some locally milled Sourdough Einkorn Bread. I was curious about it because of the history and nutrient benefits but the biggest surprise was the taste. This is the only bread that I have eaten that I actually preferred plain and not toasted. This grain has a delicious nutty almost cheesy taste to it. It is more like eating a good chocolate or drinking a nice wine. I found myself savoring the taste and not wanting to cover it up with anything else. If you like wholesome wheaty bread, then you will love Einkorn!

The Gluten Story
Simply put it has less and a totally different Gluten. The gluten in Einkorn lacks the high molecular weight proteins that many people can’t digest. In fact, the gluten genome in Einkorn is different than any other wheat. If you are sensitive to modern wheat, Einkorn can provide a delicious alternative. Give it Try!
